True Expression of the Locality

Award winning Joyo brewery was founded in 1895 and is based in the southern area of Kyoto on the Kizu river.

Joyo Brewery strives to create sake that best express the locality of their origin. They adhere to their principle of producing sake with locally harvested rice in Kyoto, as well as the local fukuryusui (伏流水 - subterranean river water) of Kizugawa (木津川) which is believed to have the perfect mineral content for sake production.


Their brewers are highly skilled 40 year veterans of their craft. Most of the work is done by hand using traditional methods. They put their heart and soul into each bottle. They believe in locally sourcing and supporting local companies wherever possible.
