The only brewery in Central Kyoto
Sasaki established itself in the same area as the famous Jurakudai Palace (聚樂第), constructed at the order of Toyotomi Hideyoshi (豐神秀吉). Hideyoshi, a big fan of tea ceremony, chose to build his palace here because of the "goodness of water" in the area, which is also a very favorable factor when it comes to sake brewing.
Kyoto is a basin surrounded by mountains on three sides. The pure ice water melts and flows down towards Kyoto, forming a natural supply of good spring water, which was very crucial to the flourish of economic activities and development of Kyoto back in those days- with sake brewery being one big part of it.
Central Kyoto, where Sasaki is located, used to be the center of sake brewing (even before Fushimi became famous). When Sasaki started its business in 1893, there were more than 130 sake breweries in the area. Today, Sasaki is the only sake brewery in the area that could stand through time and changes, and still carry on sake brewing with the same dedication and persistence passed on through generations. Taking pride of their long history, it's the core value of Sasaka to continue their heritage of producing quality sake.
