Based in the Yaotsu Town (八百津町) of the Gifu Prefecture, which is the end of the beautiful Kiso River (木曽川), Hanamori Brewery was founded in 1886 when the Kiso River was the main means of transport. Since then, their motto of putting quality over quantity, has never changed.

 

Till today, the brewery still insists on the use of traditional methods when it comes to the pressing process of sake production. All of their sake is produced either using the bag-dripped method, or the traditional Yaegaki squeezing machines, which are more time-consuming and not suitable for mass production. But it is exactly these traditional pressing methods which can give the moromi a gentle squeeze which can produce high-quality and elegant sake.
