For the sake of oysters, have some sake!

Verified and re-confirmed: Sake is the best match for sake (oopss. Sorry Chablis..)

We verified and re-confirmed this theory by having a dozen oysters each to pair with 2 junmai daiginjo. It was O.M.G. level of greatness! Sake and oysters enhanced one another and take them both to a new level.


There are good reasons to back this up. Sake, having no tannin and a good balance of acidity and alcohol, goes well with all seafood (including oysters)- this is also the reasons why you will pair oysters with Chablis as a rule of thumb in the wine world. But the winning factor here is that sake has Amino acids- an agent to induce the fifth taste- umami, which wine doesn't have. Oysters too are high in amino acids and this is why they are such a perfect match. When it comes to wine and oysters, the wine accommodates and enhances the oysters; when it comes to sake and oysters, they fit and enhance one another. So, you choose! :)
