Marinated octopus タコときゅうりの酢の物

Light and refreshing with subtle umami- it's annother great dish to pair with the Ginjo style sake

Ingredients
Cucumber 1
Wakame (seaweed) 10 - 20g
Boiled octopus 50g
Ginger 5g
salt 2-3g
*sauce
dashi 30ml
vinegar 1tbs
soy sauce 1 teaspoon
Mirin 1 teaspoon
1. slice cucumber very thin, add salt and mix it by hand
2. soak wakame into water and cut into small pieces
3. slice ginger
4. cut octopus into small cube
5. mix the sauce
6. put all together 1 - 4 and add in the sauce
