Saikyo yaki 西京焼
Saikyo yaki is speciality of Kyoto.
It’s traditional dish from Kyoto by marinating fish slice overnight in a Saikyo miso paste.
As we have mentioned before that miso goes hand in hand with sake, dishes made of miso will be a natural good match with sake. For this dish, it will be particularly good with junmai style with more obvious umami.
Ingredients:
Spanish mackerel 2 slices
A
Saikyo miso 2 tbs
Sake 1 tbs
Mirin 2 tbs
Sugar 2 tea spoon
Recipe:
Mix A
Put the fish slice in A and leave it over night or longer.
Grilled it in a pan with low to medium heat for around 10 minutes.
