We often use sake as an ingredient in cooking as much as we drink it! Sake is known to kill bacteria and remove bad smells. As sake is rich with umami, it helps to boost flavours and add depth and complexity to dishes.

Scallop sashimi recipe
Ingredients for 2-3 people
Scallop for sashimi 50g
Fennel 1 head
<Sauce>
cooking sake 1 tea spoon
Yuzu 1 tbs
Soy sauce 1 tea spoon
Dashi 30ml
1. Slice scallop
2. Slice fennel
3. Mix the ingredients for sauce
4. Put fennel on a plate and put scallop on top of that, put sauce
This refreshing dish is great with the aromatic or fresh type of sake!
