Somen- a simple every day dish to pair with sake, especially in Summer



Somen for 2 people 


Ingredients: 

Somen 2 bunch


*Soup 

Dashi 400ml 

Mirin 3 tbs 

Soy sauce 3 tbs 


*Topping

Shimeji mushroom 1/2 pack 

Ginger 1 

Fresh wakame 30g 

Spring onion 1 stalk 

Tip - check out how many minutes you need to boil somen on the back of the package. If it says 2 mins, just do 1 min and 45 secs and rinse somen with cold water for at least 3 times and drain water well. Chill it and serve cold with the soup and toppings.
